What are simple lamb chop recipes for 2 people?

i am cooking dinner for me and one other person tonight, i would like to do a lamb chop recipe...


just a simple one that is easy to cook and tastes really nice.

Lamb chop casserole.


- 6 lamb chops (3 per person)


- Can of diced tomatoes


- 1 cup of chicken stock


- 1 medium brown onion thickly diced


- 2 carrots sliced thickly


- 2 bay leaves


- Handful of fresh chopped basil


- Butter





Heat pan and melt butter. Add chops to pan and sear both sides. In a baking dish add chops, tomatoes, stock, onion, carrots and bay leaves. Cover and cook in hot oven for approx 40 minutes. Check chops to see if they are cooked to your liking, if not cover and cook further.


Serve topped with fresh basil and with a mash - either potato, sweet potato or pumpkin.
Shoulder Lamb Chops With Yellow Squash and Tomatoes





Shoulder lamb chops are cooked with summer squash and tomatoes, an easy family meal for any day of the week. Serve this dish with mashed potatoes for a hearty meal everyone will enjoy.

Ingredients:


4 to 6 shoulder lamb chops


Salt and pepper


2 tablespoons olive oil


4 cloves garlic, finely minced


1/2 cup chicken broth


1/2 cup dry white wine


1 teaspoon dried leaf thyme


1/2 teaspoon dried leaf summer savory, or more dried leaf thyme


2 cans (14.5 ounces each) diced tomatoes with juice


4 small summer squash, quartered lengthwise and sliced


Salt and pepper, to taste


Preparation:


Heat olive oil over medium-high heat in a large skillet. Sprinkle chops with salt and pepper; brown in the hot oil for about 2 minutes on each side. Add the garlic and lower heat to medium. Cook, stirring, for about 1 minute. Add the broth, wine, thyme, savory, and tomatoes. Bring to a boil. Cover, reduce heat to medium-low, and continue cooking for 25 minutes. Add the summer squash and cook for about 10 minutes longer, until squash is just tender. Add salt and pepper, to taste.


Serves 4 to 6.





Orange Lamb Chops


Lamb chops are first marinated in an orange juice and herb mixture.

Ingredients:


6 shoulder lamb chops, about 3/4 inch thick


1/2 teaspoon orange zest


1/4 cup orange juice


1/2 teaspoon dried leaf thyme, crumbled


1 tablespoon olive oil


4 ounces sliced mushrooms, or 1 can (3 or 4 ounces), drained


Preparation:


Trim lamb chops. Combine orange zest, orange juice, and thyme. Pour orange mixture over lamb chops and let stand for at least 3 hours in the refrigerator. Turn lamb chops a few times to keep coated with orange marinade mixture. Drain lamb chops, reserving orange marinade mixture. In a large skillet over medium-high heat, brown lamb chops quickly in hot oil. Reduce heat to medium-low; add mushrooms and orange mixture. Cover and simmer lamb chops for 30 to 45 minutes. Uncover and simmer for 5 minutes longer. Lamb chops recipe serves 6.

Ingredients:





* 10 lamb rib chops


* 1/2 cup olive oil


* 1/4 cup balsamic vinegar


* 2 cloves garlic, minced


* 1 tablespoon fresh rosemary, chopped

* 2 teaspoons Dijon mustard


* 1 teaspoon dried oregano


* salt and pepper to taste





Preparation:


Place lamb chops in a shallow baking dish or resealable. Combine olive oil, balsamic vinegar, garlic, rosemary, honey, mustard, oregano, salt and pepper and pour over chops. Toss to coat. Cover and refrigerate for 1 hour. Preheat grill. Grill chops over a medium high heat for about 5 minutes per side on until browned to desired doneness

Here is a really good greek recipe i like to make. Its really good!





4-6 small thick cut T-bone type lamb chops


1/4 cup olive oil


1 can diced tomatoes (14oz)


1 can tomato sauce (8oz)


1 1/2 Tbsp Cavenders All Purpose Greek Seasoning or to taste


1 cup dried parsley


1 Tbsp cinnamon


1 can Italian cut green beans (14oz) or frozen


3/4 cup instant rice


1/2 cup burgundy wine (optional)





In a large skillet, medium coat lamb chops with the Greek seasoning and brown with the olive oil. Remove chops and add the diced tomatoes, tomato sauce, cinnamon, parsley and the remainder of the Greek seasoning (do not drain the olive oil). Stir and saute sauce mixture for aprox 10 min on low-med heat uncovered. Return chops to the center area of pan and spoon on sauce mixture. Note: It is important that you turn the chops 3 or 4 times during the whole process keeping them heavenly coated with sauce. Reduce heat to low temp and cover. Simmer 1 hour stirring periodically. Remove chops again and add rice and green beans, mixing together well. Return chops and simmer for another hour or until meat is very tender and easy to pull from bone. Serves 2

LAMB CHOPS WITH CHUTNEY CRUST








1 c. fresh bread crumbs


1/2 tsp. dried rosemary, crumbled


4 (2 inch thick) lamb loin chops


4 tbsp. Major Grey's chutney





Preheat oven to 450 degrees. Butter small baking sheet. Combine bread crumbs and rosemary on plate. Season lamb chops generously with salt and pepper. Spread each side of chops with 1/2 tablespoon chutney. Dip each chop into bread crumb mixture to coat. Transfer to prepared baking sheet. Bake until crumbs are golden brown and cooked to desired doneness, about 15 minutes for medium-rare. Transfer to plate.

BROILED LAMB CHOPS WITH LEMON CAPER


SAUCE





2 lamb chops, 1 1/2'; thick


4 tbsp. butter


1 tsp. freshly grated lemon zest


1 tsp. drained capers


1 tbsp. fresh lemon juice





Wash and pat lamb chops dry, sprinkle with salt and pepper to taste. Broil in broiler about 4 inches from heat for 6 minutes. Turn chops and broil 4 minutes more. Remove and let stand 5 minutes. While the chops are standing in a small saucepan melt the butter and stir in the zest, capers, lemon juice, salt and pepper to taste and heat. Transfer the chops to plate, pour sauce over them and serve. Serves 2.

DIJON LAMB CHOPS





4 lamb chops (about 1 1/2 lbs.)


1 lemon, cut in half


Garlic powder


Freshly ground pepper


1 c. chopped fresh parsley


1/3 c. Dijon mustard


1 tbsp. plus 1 tsp. wheat bran


Vegetable cooking spray


Lemon and lime slices





Rub both sides with lemon; sprinkle with garlic powder and pepper.


Combine next 3 ingredients; mix well, and press on all sides of chops. Place chops in an 8x12x2 inch baking dish coated with cooking spray; bake, uncovered, at 500 degrees for 4 minutes. Reduce heat to 350 degrees, and bake an additional 15 minutes or until a meat thermometer inserted in chop registers 180 degrees. Garnish with lemon and lime slices
Easy-Peasy Lambchops 4 2:





4 loin lamb chops OR


4 shoulder chops*


2 tablespoons prepared horseradish


1 package frozen French-cut string beans





*shoulder chops are less pricey, have a fine taste but a little more fatty bits here %26amp; there...they work well in this particular recipe due to cooking method [baking tries out the fatty bits, flavors the beans below].





Method: First, brown chops in any veggie oil. Spread out frozen string beans in shallow casserole ovenproof dish, sprinkle a little seasoned salt on beans. Place browned chops on top of frozen string beans, season well with salt %26amp; pepper...then spread prepared horseradish around on chops. Bake at 325-350 [depending on your oven] until chops test tender enuf. The horseradish tang takes the ';baa-baa'; out of the less expensive lamb cuts, and the flavored juices lift the green beans into pure delishus.
Grilled lamb with Brown Sugar Glaze


INGREDIENTS


2 tablespoons brown sugar


1 teaspoon ground ginger


1 teaspoon dried tarragon


1/2 teaspoon ground cinnamon


1/2 teaspoon ground black pepper


1/2 teaspoon garlic powder


1/4 teaspoon salt


2 lamb chops





In a medium bowl, mix brown sugar, ginger, tarragon, cinnamon, pepper, garlic powder, and salt. Rub lamb chops with the seasonings, and place on a plate. Cover, and refrigerate for 1 hour.


Preheat grill for high heat.


Brush grill grate lightly with oil, and arrange lamb chops on grill. Cook 5 minutes on each side, or to desired doneness.

Easy Pan Fried Lamb Chops


Ingredients You Will Need:


8 lamb chops


4 tablespoons olive oil


2 tablespoons fresh oregano, chopped


2 tablespoons fresh thyme, chopped


2 tablespoons fresh rosemary, chopped


Sea salt


Fresh ground pepper





Wash the chops, and pat them dry with paper towels. Set the chops aside while you prepare the frying pan. A cast iron skillet is the best pan for pan frying just about anything, but, if you don鈥檛 have a cast iron pan, any frying pan will get the job done. Set the heat at about medium high. Add the oil, and swish it around to coat the bottom of the pan. Add the chops to the hot oil. Allow the meat to fry for 3 minutes before you turn it. While the meat is cooking, mix the spices together, and set aside. After the meat has been turned once, sprinkle about two tablespoons of the spices over the meat, allowing some of the spice to fall into the hot oil.





Cook the meat on the second side for 3 minutes. Then turn the meat, sprinkle the spices on it and cook it for one minute longer. Quickly remove the chops from the oil, and place them on a rack for 30 seconds, allowing the excess oil to drip off. Serve immediately.

Spicy Lamb Chops


陆 kg lamb loin chops


125 g button mushrooms


4 small potatoes, peeled


100 ml yoghurt, plain


1 tsp salt


1 green chillies, seeded and chopped


陆 tsp roasted masala


1 tsp garlic, crushed


1 tsp fresh ginger, crushed


1 tsp ground cumin


陆 tsp ground coriander


1 tbsp cooking oil





Grease ovenproof dish and place lamb chops, mushrooms and potatoes into dish. Mix yoghurt with remaining spices and pour over ingredients in dish.


Bake in a preheated oven for 45 minutes at 2oo掳C or until meat is cooked and sauce is brown and bubbling.





Serve with a green salad and bread to soak up the sauce.

Orange Lamb Chops


4 leg lamb chops


100 ml wine vinegar


60 ml lamb stock


50 g butter


5 tbsp marmelade


4 slice(s) of 1 orange for garnish


陆 tsp paprika


salt and pepper, to taste





Melt the butter in a heavy based frying pan and saut茅 the chops until lightly golden brown. Put a lid on whilst cooking the chops. Then sprinkle with paprika and season with salt and pepper. Add the stock and vinegar. Spoon a tablespoon of marmalade over each the of chops.


Cover and let simmer for 35-40 minutes. Add extra stock if needed.


Garnish with a slice of orange on each the of chops.





Serving suggestion: Serve with potatoes and vegetables
