Any good, easy lamb recipes?

I'm fixing lamb for the first time, for my husband. I bought two bone-in lamb chops, about a pound. Any suggestions, and ideas for side dishes, are greatly appreciated!Any good, easy lamb recipes?
INGREDIENTS:


about 1 lbs. lamb chops, about 3/4 to 1-inch thick


salt and pepper


1/3 cup orange marmalade


2 tablespoons lemon juice


PREPARATION:


Place lamb on an oiled broiler rack. Broil for 6 to 7 minutes on one side. Season with salt and pepper; turn. Broil on the other side for about 5 minutes, or until almost cooked to desired doneness. Season second side with salt and pepper.


Combine the marmalade and lemon juice; spread evenly over the lamb chops. Broil for about 2 minutes longer.


Serves 4 to 6.





I usually serve w/ baked or mashed redskin potatoes (or pasta)and broccoli or zuccini........Delicioso!!!!!!!!!!!!Any good, easy lamb recipes?

Lamb Chop with mint Jelly or Redwine sauce, serve it with mashed potato or roasted new potataoes and sauted vegetables.
Greek Lamb Chops With Tzatziki Sauce





4 - 2'; thick Loin Lamb Chops


Extra Virgin Olive Oil


4 cloves - Garlic, crushed


1 Tbls - Dried Oregano


Juice of 1/2 Lime


Tzatziki Sauce





Garnishes


Greek Olives


2 Tomatoes, diced


1 Medium Onion, diced





Marinate Lamb Chops in Olive Oil, Garlic, Oregano and Lime Juice, turning occasionally, for 3 hours refrigerated. Pre-heat broiler pan 4'; under broiler. Line pan with aluminum foil. Meanwhile, prepare Tzatziki sauce.





Remove lamb from marinade, place on broiler pan rack and broil 5 minutes on first side, 3 minutes on second side. Serve with Tzatziki sauce and Garnishes.





TZATZIKI SAUCE


1 lb. Plain Yogurt


2 Medium Cucumbers, peeled, seeded and grated


3 cloves Garlic, crushed


1 Tbls minced fresh Dill


2 Tbls Extra Virgin Olive Oil


Salt %26amp; Pepper to taste





Place a double layer of cheese cloth inside a colander set over a bowl. Pour in the Yogurt and let drain for several hours. Clean the yogurt container and pour the yogurt back in and refrigerate. Place the grated Cucumbers in the lined colander and let drain for about 2 hours. Add the drained cucumber to the drained yogurt in the plastic container.





Stir the Garlic, Dill, Salt %26amp; Pepper and Olive Oil into the yogurt/cucumber mix and let sit in refrigerator while you prepare the lamb.





Serve with couscous, grilled asparagus. You could drizzle some of the sauce over the asparagus.
I love lamb and just recently started to find recipes that are simple and tasty. Here's a recipe I found on allrecipes.com. This is the scaled down 2 serving version.


For sides maybe try grilled asparagus and garlic mashed potatoes.





Lamb Chops w/Balsamic Reduction


Ready in 40min





INGREDIENTS





* 1/2 teaspoon dried rosemary


* 1/8 teaspoon dried basil


* 1/4 teaspoon dried thyme


* salt and pepper to taste


* 2 lamb chops (3/4 inch thick)


* 1-1/2 teaspoons olive oil


* 2 tablespoons minced shallots


* 2 tablespoons and 2 teaspoons aged balsamic vinegar


* 1/4 cup and 2 tablespoons chicken broth


* 1-1/2 teaspoons butter





DIRECTIONS





1. In a small bowl or cup, mix together the rosemary, basil, thyme, salt and pepper. Rub this mixture onto the lamb chops on both sides. Place them on a plate, cover and set aside for 15 minutes to absorb the flavors.


2. Heat olive oil in a large skillet over medium-high heat. Place lamb chops in the skillet, and cook for about 3 1/2 minutes per side for medium rare, or continue to cook to your desired doneness. Remove from the skillet, and keep warm on a serving platter.


3. Add shallots to the skillet, and cook for a few minutes, just until browned. Stir in vinegar, scraping any bits of lamb from the bottom of the skillet, then stir in the chicken broth. Continue to cook and stir over medium-high heat for about 5 minutes, until the sauce has reduced by half. If you don't, the sauce will be runny and not good. Remove from heat, and stir in the butter. Pour over the lamb chops, and serve.
Don't get awed by the name its REALLY simple to make.





BBQ Butterflied Leg of Lamb








1 leg of lamb, butterflied*, 4-5lb


1 tbsp grated orange rind


陆 cup orange juice


陆 cup dry white wine


录 cup soy sauce


1 tbsp grated gingerroot or 1 tsp ground ginger


1 tsp dried thyme leaves


录 tsp pepper





Preparation:


Combine orange rind and juice, wine, soy sauce, gingerroot, thyme and pepper. Pour over lamb in large shallow glass or enamel pan. Cover and refrigerate overnight, turning occasionally. Drain lamb, reserving marinade. Barbecue on lightly greased grill at medium heat. Turn lamb occasionally, basting with reserved marinade. Cook for about 1 hour or until well browned but still pink in the centre. Slice thinly and serve immediately.





*Butterflied leg of lamb:


Remove the bone and spread flat. Cooks quickly and slices easily.
Lamb stew recipe with shoulder chops, potatoes, carrots, and other vegetables, along with seasonings.





INGREDIENTS:


1 pound lamb shoulder chops


2 medium potatoes, quartered


3 small carrots, cut in 2-inch pieces


1 medium onion, quartered


2 ribs celery, cut in 1/2 inch pieces


1 small green bell pepper, cut in 1/2 inch strips


1/2 cup diced rutabaga, optional


1 1/4 teaspoons salt


dash pepper


3 tablespoons cold water blended with 1 1/2 tablespoons flour


2 tablespoons chopped parsley


PREPARATION:


Trim fat from lamb chops then cut meat in 1-inch pieces. Place chops and bones in a stock pot or Dutch oven; barely cover with about 1 1/4 cups water. Cover pan and simmer for 45 minutes (do not boil).





Add potato, carrots, celery, green pepper, rutabaga, salt, and pepper. Cover and simmer for 20 to 30 minutes, until meat and vegetables are tender. Remove bones. Remove from heat; stir in the flour and water mixture. Return to heat. Cook, stirring, until stew is thickened. Add parsley and taste and adjust seasonings.


Lamb stew serves 4.
Ww , the recipies from the others looks gret, mine is very simple, just cut the meat surface with criss cross pattern, marinate with the kind of japanese marinate you can fin in supermarket, beef or lamb is the same, and pan fry it, cook the veggies in the lamb fat left from the lamb steak, plus potatos, it nice, coz i tried it before.

Grilled Lamb Chops with Mint Salsa


Prep: 20 min / Cook: 10 min





A pourable vinegar-based mint sauce is traditional with lamb; this update features a chunky mint salsa made with bell peppers, scallions, garlic, and the lemon.





2 cloves garlic, peeled


1/2 cup chopped fresh mint


1/4 cup diced red bell pepper


1 scallion, thinly sliced


1 tsp grated lemon zest


3 tbsp rice vinegar


1/2 tsp lemon juice


21/4 tsp sugar


1/2 tsp salt


1/2 tsp dried oregano


4 well-trimmed loin lamb chop (5 ounces each)





1. In a small pot of boiling water, cook the garlic for 2 minutes to blanch. Drain. When cool enough to handle, finely chop and transfer to a medium bowl. Add the mint, bell pepper, scallion, lemon zest, vinegar, lemon juice, 2 tsp of sugar, and 1/4 tsp of the salt; set aside.





2. In small bowl, combine the oregano, the remaining 1/4 tsp each sugar and salt. Rub the mixture onto both sides of the chops and let stand for 10 minutes.





3. Preheat the grill to medium (or preheat the broiler). Grill the chops 8 inches from the heat (or broil 6 inches from the heat) for 31/2 minutes per side for medium-rare. Serve the chops with the mint salsa spooned on top. Serves 4.
