Does anyone have any recipes for lamb kleftiko or any greek lamb dishes?

ingredients


8 lamb chops


375ml (1陆 cups) ready-made Italian tomato sauce


450g baby spinach


200g halloumi cheese, sliced


Sea salt and freshly ground black pepper, to season


Juice of 1 lemon





Directions


Preheat the grill.


Place the chops in a baking dish and toss in the tomato sauce.


Grill for 6 minutes or until cooked to your liking.


Toss in the spinach.


Place the cheese on top.


Season and add a squeeze of lemon juice.


If you like, make this a one-pot dish. Pour the tomato sauce into a casserole dish and top with the spinach, cheese and lamb chops. Bake until the lamb is cooked.Does anyone have any recipes for lamb kleftiko or any greek lamb dishes?
To make a kleftiko, you really need a wood fired earthen ware oven, season and add additional fat to the meat (shoulder or leg of lamb) then seal and cook (with or without potatoes enclosed with it) at a very low temperature for a least 24 hours. You can achieve almost the same effect in your own oven, the key is very slow cooking and making sure that the meat is well sealed so there is no evaporation and it cooks in its own juices.

I note that you had a reply from a Cypriot. She/he gave you a recipe for roast. Kleftiko gets is name from stolen. This came about during the Turkish occupation of Cyprus when the Turks did not allow the Greeks to eat well and they were deprived of certain foods. On occasions a lamb was stolen and to avoid being caught the meat was cooked in covered pits the only addition being herbs to give the meat flavour. Of course now this is not necessary and it is cooked in the oven usually in an earthenware pot. I usually use lamb shanks and start the process on top of the cooker by browning my meat in a casserole which can be put in the oven. I use a little olive oil to brown the meat and then add my herbs and spices and a glass of water cover the casserole and place in oven you can start and finish cooking your meal as fast or as slow as you like by increasing or reducing the temperature of the oven

Im CYPRIOT!!! I live in Cyprus and we cook greek food all the time greek cypriot same difference!!!





Last week i cooked my lamb in the oven in my house, usually i do cook it outside in the outside oven but its more messy outside as you need wood etc... Anyway this is what i did for me and my hubby!!!





6 pieces of lamb


4 potatoes washed and cut in half


2 onios peeled


2 carrots


salt, ground black pepper, ground cinemmon


olive oil





Pre heat oven to 200 degrees celscius





Put potatoes in baking pan, sprinkle with salt pepper cinemmon, put lamb ontop sprinkle again with salt pepper and cinemmon. cut onions into circles and carrots into thirds and add to baking pan.





Pour half glass of olive oil onto food and cover with foil or baking pan lid.





Cook for 3hours with lid on and uncover till food goes golden brown.

i just made a lovely lamb dish the other day and i got the reciepe from goole i just put in simple lamb dishes and a whole range of dishes came up... Its worth a look...happy cooking
