Makes 30 small cocktail sized kebabs, asian style, if you want bigger then just shape into larger kebabs.

1lb minced lamb

Half tsp salt

1 tsp ground cumin

1 tsp ground corriander seeds

Quater tsp garam masala

Eigth tsp cayenne pepper

2 tbsp finely chopped corriander

3tbsp plain yoghurt

Simply combine all the ingredients and grill or bake in the oven on a lowish heat until cooked through.

These can also be made into yummy meatballs by dropping them into your favorite sauce and cooking them that way xxxxx
I would mix some olive or groundnut oil with equal amounts of paprika, cumin, cayenne pepper (bit less of this) and turmeric. Crush in a garlic clove and marinate your pieces of lamb for as long as you can..... at least 4 hours. Heat on a VERY hot griddle and remove before completely cooked and leave to rest for 5 mins wrapped in foil. Times depend on the size of the lamb cubes but I'd keep them small.
i'm a huge fan of marinades but i dont ever use a recipe so off the top of my head, give it an overnight in (and then cook it in also):

olive oil

lemon

pepper corns

rosemary

a little salt

onion

garlic

also marinade any veggies that you would like to have with it in similarly, but perhaps with more italian herbs (sage, basil, ect)

brown rice would be a great side.
My mum mixes egg, flour, minced lamb and herbs.

Put into a ball.

Then put a stick of lemongrass into the ball, and grill until cooked.

It's beautiful.

It's more of a meatball sorta thing than a Kebab.

But you could use similar.

Alex.
